Cooking Bajan Style: Baked Chicken

Bajan Baked Chicken Recipe

We have to admit, it has been a while since we shared one of our "good ole" Bajan recipes with you. However, today we have made it extra special with one of our favorite dishes that we guaruntee you will make over and over again - our famous Bajan Baked Chicken. Not many Sundays pass by in a Barbadian household that a chicken is not baking away in the oven, the aromas of the fresh herbs, local vegetables and a sizzling chicken infusing the air. Bajan Baked Chicken Recipes

Bajan Baked Chicken

Ingredients:
1 Whole Chicken (about 4lbs lime and salted) 
3 Med. Onions (Sliced)
5 Gloves Garlic (Sliced)
Thyme
Chives
5 TBSP Bajan Seasoning
3 TBSP Butter
3.5 Cups of Chicken Stock
.25-.5 cup Bajan Rum

1 TBSP Lemon Seasoning
Salt & Pepper to Taste

Method:
Preheat the oven to 450 F. Smear the Bajan Seasoning around the inside and under the skin of the chicken. Place chicken stock in the baking pan. Paint chicken with butter and place in water breast side up on top of onions. Place sliced garlic and herbs on Chicken. Sprinkle with salt, pepper and half the lemon seasoning. After 1 hour remove herbs and garlic from atop the chicken and place in liquid. After 1.5 hours after starting time turn the chicken and sprinkle with the remaining lemon seasoning, a sprinkle of salt and pepper and a dash of brown rum. Return to the oven and reduce temperature to 375 F. Cook for approximatly 1 more hour, until the internal temperature reached about 165 F. TIP: Baste chicken every 20 minutes with liquid it is cooking in.
