Cooking Bajan Style: Cassava Pone

Cassava Pone

Cassava Pone is one of those authentic Barbadian treats which you would find in just about any local home. Just ask a local about "Pone" and they will tell you all about it and where to buy it. Cassava pone is one of those sweet treats which is not a cake, pudding or cookie but a delicious moist delight that pairs perfectly with tea in the afternoon! In Barbados we grow and eat a large amount of cassava so it is natural that we have found another way to prepare and enjoy this ground provision. We have included the recipe below. Ingredients

2 cups grated cassava (yucca root)

1 cup grated coconut

3/4 cup brown sugar

3/4 cup of unsalted butter

1 tsp ground cinnamon

1 tsp vanilla extract

½ cup raisins

Preheat oven to 350 degrees F. Grease a 9 X 13" pan. In a large bowl combine the sugar and butter until creamed. Add the grated cassava and mix well. Add coconut, sugar, extract and cinnamon and mix together. Pour mixture into the greased baking dish and bake for 1 hour until the top is golden brown. Let the pone cool for at least 10 minutes before serving. Enjoy with a cup of tea!
