Cooking Bajan Style: Pulped Eddoes

Pulped Eddoes Recipe Barbados

Pulped eddoes are one of those authentic Bajan dishes you will find in a local's home for a Sunday lunch! One of the many ways we Bajans eat eddoes, is "pulped". This means the eddoes are cooked with lime and pepper to taste!

Eddoes in Barbados

Here is the recipe for pulped eddoes:

INGREDIENTS

1 cup of eddoes
3 TBSP fresh lime juice 
1 small onion (grated) 

Fresh pepper to taste
1 TSP Salt
1/2 TSP Scotch Bonnet (minced)

Water to boil

METHOD 

1. Wash the raw eddoes thoroughly and remove the fines 'hairs' on the exteriors
2. Bring the water to a boil and add eddoes
3. Boil for 25 minutes or until eddoes are soft
4. Remove eddoes from water and remove them from their skin (cut the skin of one side and apply pressure to the other until the Eddo 'pops' out
5. Add eddoes to a bowl and fill with water to cover. Add add rest of ingredients.
6. Leave to set for 20 minutes and enjoy!
