Cooking Bajan Style: Corn Beef Fritters

Corned Beef Fritter Recipe Barbados

It's tradition in Barbados to eat food that was created by our ancestors. Corn Beef Fritters have been around for many years and locals all over the islands often cook up these delicious treats. It is said that these snacks came about when the plantation workers prepared snacks to carry along and munch on after a hard day of labour. Now, no matter what time of day, we in Barbados continue to make these mouth-watering nibbles. Corn Beef fritters can be eaten with brea, crackers or simply on their own!

Here's the recipe for Bajan Corn Beef fritters for you to try at home:

Ingredients:

1 tin of Corned beef
1 scotch bonnet pepper (seeds removed & chopped very fine)
1/4 teaspoon of ground black pepper
1 small onion (finely chopped)
1/4 red or green pepper or both (finely chopped)
1/2 spring onion (finely sliced in rings)
1 egg
1/2 cup water
1/2 pound plain flour
Method:

  1. Open the tin of corned beef & crush/mash to a crumble in a large bowl.
  2. Add the dry contents to the corn beef and stir.
  3. Then add onion,peppers and stir again
  4. Make the batter mix in a separate large bowl
  5. Whisk the egg till fluffy & Add 1/2 cup water and whisk again
  6. Add 1-2 cups of plain flour and stir with large wooden spoon
  7. Add more water or flour to get the mix to a fairly stiff consistency, (it should slide off the spoon but not too easily)
  8. Pour the batter onto the Corn beef mix, and stir, but not too much,( you want some of the Corn Beef to stay in crumbles)
  9. Heat the fry pan with plenty of oil on a high temperature
  10. Use a wooden spoon to measure fritter sizes (no need to be perfect, but not too thin about 1-2cm thick per fritter)
  11. Fry on both sides till golden brown. Fry 1 or 2 and taste test
  12.  Adjust the mix with more of anything you may need to suit your taste.
  13. Then fry the whole batch
