Cooking Bajan Style: Coconut Bread

A few days ago I was craving something {anything} coconut; so I walked over to my neighbor and got myself a freshly picked one {yes from their tree}. After contemplating what to cook/bake I settled on good ol' traditional Bajan coconut bread or more commonly known, Sweet bread. This coconuty bread is topped with a rugged crispy crust and filled with moist fruits. The inside has a mellow and fragile texture which crumbles in your mouth.  Sweet Bread has been a family favorite for a long time but I have never physically baked it. I decided to change that so called up my aunt who has in my opinion the best sweet bread recipe on the island. Here it is!

Sweet Bread Barbados

 

COCONUT BREAD RECIPE

1lb pound brown sugar

8 oz lard and 8 oz margarine

1 teaspoon each Nutmeg, mixed spice and cinnamon

2 eggs

1 cup of water

1 teaspoon vanilla essence

2 lbs flour

4 tablespoons baking powder (YES, tablespoons)

1 lb grated coconut.

Raisins (optional)

Melt lard and margarine, pour into a large bowl and add sugar and spices. Stir lightly. (Sugar does not dissolve) Beat the water with egg and add to bowl. Stir in. Sift in all flour and baking powder, mix well. Add grated coconut and raisins. Mix thoroughly. Spoon/scrape into 4 - medium sized greased loaf pans and bake at 350 deg. for 50-60 minutes. Some mixed sugar and coconut can be kept to sprinkle onto the top of each pan. A cherry cut in half can also decorate the top.

Could I suggest using cups as measurements instead of lbs. and oz.'s it is so much easier. Thank you .

Why not ask her to use both, instead of suggesting she just uses cups.
My 100 year old Bajan grandmother used lbs and ozs and that is what I and most Barbadians who have not become Americanised understand, but I am open to using cups also.

i am from Thailand, we use cups too.

The egg addition is unknown to me. That has never been my Bajan experience.

It had nothing to do with being Americanized. If I'm born in the us to bajan parents of course I'll not going to know how Barbados' measuring system works. Hence why this recipe. Didn't come out well for me because the conversation was off. Having both measuring systems would be helpfu .

Im Bajan,both measurements are ok for me, nothing to do with being Americanize,stupid comments.
