Cooking Bajan Style: Corn Pie

Corn Pie Barbados

One of the most well known and favorited side dishes in Barbados is corn pie. You can find corn pie at just about any Barbadian family gathering or lunch. It is considered an easy, go to dish which everyone loves and no one can resist. The sweet and buttery flavour of corn pie couples perfectly with the spicy foods and presents a sort of cooling to your pallete, and best of all it takes ten minutes tops to prepare!  Take a look below for our simple, easy to do recipe for Bajan Corn Pie.

CORN PIE RECIPE

1 can corn 
1 can cream style corn
2 tablespoons grated onion
2 tablespoons sugar
3 tablespoons melted buter
2 ozs milk
2 eggs well beaten
2 ozs. grated cheese
2 tablespoons (heaped) flour

Add all the ingredients together and fold the eggs in last. Place the mixture in a greased baking dish and bake at 350 degrees for about 30-40 minutes or until the mixture has set. Enjoy!

I've made this a few times. It's an easy, quick, go-to recipe that tastes great! I would not add or take away one ingredient! I've also made this dish using a Trinidadian recipe,which is of course spicier but takes a lot more time to make.
