Cooking Bajan Style: Pumpkin Fritters
22nd May, 2012Pumpkin is frequently used in many Bajan dishes such as soups, sauces, conkies and of course the famous fritters (one of our favorites). The vegetable is not your average orange pumpkin but rather it comes in a variety of shapes and colours. It has a texture and flavour that is similar to butternut squash and can be found in any supermarket or local farmer's market. We decided to feature pumpkin fritters and provide you with a secret recipe for this divine side dish. When sampling Bajan cuisine, you must try a pumpkin fritter.. or four! (They are that good!) Pumpkin Fritters Recipe
1 1/2 lb. pumpkin cooked
1 large egg
2 tbsp. butter softened
3 tbsp. sugar
1/8 tsp salt
1/4 tsp vanilla essence
1/4 tsp powdered cinnamon
1/2 cup flour
1/4 tsp baking powder
cinnamon- sugar mixture
Place first 7 ingredients in blender and process on low speed to blend. Sift flour and baking powder, add to blender, and process a few seconds to make batter of consistency for frying. Drop by teaspoonfuls into shallow oil and fry to crisp golden brown, turning once.Drain on paper towel, transfer to hot serving dish and dust with cinnamon sugar mixture. Serve hot. A pinch of cinnamon and nutmeg can be added to blender mixture.
