Cooking Bajan Style: Bakes
21st July, 2014There's nothing better than waking up to the smell of Granny's homemade bakes, it makes your heart smile. In Barbados, we eat these bakes or muffins mostly for breakfast, but you can eat them anytime of the day! These bakes can be eaten with cod fish, fishcakes, porridge, cheese or just plain butter!
Here's the recipe for good ol' fashioned Bajan homemade Bakes:
Ingredients:
1lb Flour
1 tbsp Baking Powder
1-2 tbsp Sugar
1 grated Nutmeg
A Pinch of Spice
A Pinch of Salt
1 tbsp Almond Essence
6-8 oz Water
1/2 cup of Corn or Vegetable Oil (for frying)
Preparation:
- In a mixing bowl, combine all dry ingredients
- Add essence, water and knead into a ball
- Break into small balls & flatten
- Heat oil in frying pan and when hot add bakes
- Let cook/fry until golden brown only turn once
- Remove from frying pan and place on paper towel to drain any oil.
