In Season: Sugar Cane

And the time is here again when the cane fields are being cleared, the tractors are chuttering down the cart roads and highways with tons of raw sugar cane ready to be processed, and the sugar cane factories are working harder than ever. But with all that going on, one of our favorite parts of this season is being able to access a small amount of raw cane to enjoy all to ourselves. The sweet and natural taste of the raw cane brings me back to days in school when my helper would cut some up and I would spend all afternoon munching away on this sweet (fuh days) goodness. Sometimes this raw cane is not very accessible, however you can often find vendors selling it when it becomes abundant. If you manage to buy a whole cane stalk be careful when peeling and cutting it as it is very (and I mean very) hard and difficult to work with. Remember you do not swallow the cane, but just chew it up to extract all that sweet goodness.
