Cooking Bajan Style: Bajan Stuffing

Bajan Stuffing recipe

Looking to add a little touch of tropical flavour to your thanksgiving dinner this year? Why not spice things up with a delicious slice of Barbados! Shake things up with this delicious Bajan stuffing recipe; perfect as a dish on its own or as a flavorful stuffing for your holiday bird!

 

Ingredients: 

3 packs of Eclipse biscuits

1 tsp thyme

1.5 tsp chopped chive

2 pods of garlic (dice)

1 stalk of celery (dice)

2 diced onions

1 tsp marjoram

2 sweet peppers (dice)

scotch bonnet pepper finely diced

salt and pepper to taste

 

Soak biscuits in a bowl of water allowing them to soak up the liquid. Add garlic, onion and fresh herbs to the mixture mixing slowly. Add the remaining ingredients, sprinkling with salt and pepper to taste. Continue to stir mixture until it has reached a desired texture. 

Place mixture in baking dish and bake at a medium heat until golden brown. The mixture can also be used to stuff turkey or chicken before baking for a delicious Bajan styled meal!
