Rum and Port Cobbler with Banks 5 Island Rum

Feel like further expanding the palate you paint with, when it comes to concocting cocktails? Whether it be whipping up a quick something for thirsty party guests or just for you to relax and unwind, we will bring you Barbadian inspired recipes that never fall short of flavour. Today we will be featuring a specialty cocktail created by Jules at The Cliff Restaurant with none other than Banks Rum. Very in depth and bold flavors all muddled together create the perfect balance of sweetness, the port adding a very interesting overall element to the drink. Take a look below and make one for yourself!

RUM & PORT COBBLER

1 ½
Banks Gold Rum
1 Fresh Lime juice
1 Simple Syrup
6 cubes pineapple
6 segments orange
6 segments lemon
8 mint leaves
1 ½ port
 

Garnished: lemon, pineapple, orange, mint spring

Method: Muddle all the fruits together, pour the liquids over them and shake. Pour cocktail in highball and float with the port.
