Bottoms up: Pomegranate cooler in Barbados

Its Wednesday and yes, we are thirsty already. We usually wait for the weekends, but this Wednesday we decided to cool ourselves down with some fresh pomegranate and of course ..rum. Perfectly balanced with sweet honey and slightly tart pomegranate, this tropical cocktail sums up our definition of divine; plus it is just as stunning on the eyes as it is on the tastebuds. 

Pomegranate cooler cocktail recipe  Barbados

 

Ingredients

2 OZ dark rum
2 TBSP honey
1 cup Pomegranate juice
1/8 cup brown sugar
1 TBSP fresh lemon juice
10-15 fresh mint leaves
1 cup seltzer water
2 TBSP pomegranate seeds

Directions

Heat the pomegranate juice, sugar and lemon juice together and simmer for about 5 minutes or until slightly thickened(the consistency of syrup). Allow to cool. In a shaker combine the rum, honey, pomegranate syrup, mint leaves and shake. Divide into two glasses filled with ice and top with seltzer water. Garnish with pomegranate seeds.

Enjoyed by yourself or makes a fabulous (and impressive) party drink!
