Barbados Blooms: Purslane

Some of you may have heard of it, some of you not, nonetheless we will tell you anyway. Nik-named Pursley by many Barbadians - however more globally known as Purslane - is a succulent plant found along many coasts of Barbados. Not only does it make for a pretty coastline border but you can actually enjoy it in a variety of meals! It is slightly sour and salty in taste and the texture is somewhat waxy. Due to its salty flavour you can use it to season foods such as rice, stews or soups. Additionally you can toss it raw in salads or saute it with other vegetables. This weed also contains many nutrients including Omega-3 fatty acid, Vitamin A B, C and E along with many dietary minerals!

If you pass it during one of your visits, don't hesitate to pull a leaf and try it! You may be pleasantly surprised!
