Cooking Bajan Style: Pickled Cucumber

One of Barbados' most famous and raved about side dishes is pickled cucumber. Now we are not speaking of your typical 'pickles in a jar', but rather thinly sliced cucumber which is dressed with lime, salt, onion and scotch bonnet pepper. In addition to complimenting many main dishes, pickled cucumber can also be part of a variety of entrees such as breadfruit, bul-jol and pudding and souse. Its tart and spicy flavor really adds an extra umph as well as completes to many Barbadian meals. Here is the recipe to our very legendary pickled cucumber. 

Barbadian Pickled Cucumber

Ingredients
4 local Cucumbers (if you do not have access to these English cucumbers can work)
1/4 medium onion (finely minced)
3 limes (the juice)
1.5 TSP sea salt
1/2 Scotch Bonnet Pepper (finely minced)
1 small bunch parsley (chopped)

Method
1. Peel and thinly slice cucumbers
2. Add all other ingredients to the cucumber and mix.
