Cooking Bajan Style: Mango Cheese
21st May, 2014There is nothing quite like an abundance of mangoes sitting in your fruit basket. They start to become so plentiful you often have no clue how to use all of them up! Yes you can surely eat the fruit, however we love to experiment and make little exciting treats. A couple days ago we thought we would test out some Mango Cheese. This candy is very similar to the famous Guava Cheese however utilizes mango instead of guava (you don't say). Below is the recipe we used. The tasty and tart mangoes were balanced out perfectly by the sugar, however the candy was not overly sweet! Such a treat, you must try them for yourself!
MANGO CHEESE
Ingredients:
750 g sugar
15 large Mangos
juice of one sour limes or lemon
Directions:
Cut the mangoes and scoop out the flesh. Blend the the flesh to a pulp.
Put in an aluminum pot and add sugar. Stir continuously on medium heat. After 15 minute, add lime/lemon juice.
Continue to stir till mixture thickens, leaves the sides of the pot and comes together like a ball.
Grease a marble slab or wooden board as well as rolling pin. Turn out the mixture on to this surface and roll out till flat and smooth.
Allow to cool a little and while still warm, cut into cubes or diamonds and let cool completely.
Store in an airtight tin.
