While it may be “summer” year-round in Barbados, the days are definitely getting much hotter and we at Loop Barbados have the perfect thirst-quencher that will satisfy your taste buds! We made a mango mojito that we think you’re going to love! A mojito is considered to be a very popular summer drink, and with mangos in season in Barbados, it adds that perfect Caribbean flare! Check out our recipe below and whether you are in Barbados or somewhere else this cocktail will go down just as easily!

Mango Mojitos in Barbados anyone?

Mango Mojito

6-8 fresh mint leaves

2 ½ oz simple syrup

1 oz white rum

1 ½ oz club soda

1-2 oz mango puree

Juice of one lime

Garnished: fresh mint leaves

Method: Puree the fresh, peeled mango with the juice of one lime in a food processor or high-speed blender until smooth (or almost smooth.)In the bottom of a glass, add 1 oz of the simple syrup and mint leaves and muddle. Add ice to the glass, and then pour the rum, the remainder of the simple syrup, the mango and lime juice puree, and the club soda on the top. Mix with a long spoon, and garnish with an additional spring of mint.

So easy and quick to make, and so delicious! Cheers!
